Merry Christmas!

Because of the madness that is the holiday season, I’m going to take a break from my usual blog post this week.  Instead, I’m going to give you the recipe for my grandmother’s Russian Tea Cakes.  Enjoy!  

Grandma Hayes’s Russian Tea Cakes

1 cup butter (margarine is an okay substitute)

1/2 cup granulated sugar

1 teaspoon vanilla

2 1/4 cups all purpose flour

3/4 cup chopped walnuts (or your favorite type of nuts)

1/4 teaspoon salt

1/2 cup powdered sugar

 

Preheat oven to 400 degrees.

Mix butter, 1/2 cup granulated sugar and the vanilla in large bowl.

Mix in flour, nuts and salt until dough holds together.

Shape dough into  1-inch balls and place about 1-inch apart on an ungreased cookie sheet.

Bake 10 to 12 minutes or until cookies are set.  You want them firm, but not brown.

Remove from cookie sheet and cool for a minute or two on a wire rack.

While they are still warm, roll cookies in powdered sugar to coat them lightly.  I like to do this by placing sugar and cookies in a gallon bag and shaking them around.

Cool cookies on wire rack for a minute or two, then powdered sugar again.

Enjoy with hot chocolate, coffee, or beverage of your choice.
